Oatmeal Cookie Pancakes



1 cup flour
1/2 cup quick cooking oats
2 tsp baking powder
3 tbs Brown Sugar
1 tsp cinnamon
1/2 tsp nutmeg
1 egg
1 tsp vanilla extract
1/3 cup raisins
1 1/4 cup milk (whole cows milk or full fat coconut milk will both work)


In a bowl add the flour, oats, salt, brown sugar, baking powder, brown sugar, cinnamon, and nutmeg, mix until well combined. Make a well in the dry ingredients, add the milk, egg and vanilla, stir until just combined. Add the raisins and stir.
Heat a griddle or skillet over medium heat, coat with cooking spray.
Drop about 1/4 cup of batter on the hot griddle. Cook until dry on the edges and bubbles start to form in the center. Flip and cook on the other side until cooked through, about 2 more minutes.

Sunday Morning Lemon Poppy Seed Pancakes



3/4 cup milk
1 TS vinegar
1TS Lemon Juice
1 egg
2TS melted butter
1/2ts vanilla extract
1cup flour
2TS white sugar
1ts baking powder
1/2ts baking soda
1/2ts salt
1TS poppy seeds
1TS lemon zest
Cooking Spray


1. Stir the milk, vinegar, and lemon juice together in a bowl; let stand 10 minutes to curdle. Whisk in egg, butter, and vanilla extract.
2. In a separate bowl, mix together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest until well combined. Pour the milk mixture into the flour mixture and whisk a few times until the batter is mostly free of lumps.
3. Heat a skillet over medium heat and spray with cooking spray. Pour 1/4 cup of batter per pancake into the skillet and cook until bubbles appear on the surface, about 2 minutes. Flip the pancakes over with a spatula and brown the other side, about 2 more minutes.

Cottage Cheese Pancakes



80 g wholemeal flour
50 g plain flour
1 tsp baking powder
1 tbsp sugar
1/2 tsp salt
80 ml milk
50 ml yogurt
1 tsp melted butter or vegetable oil
1 medium egg
3 tbsp cottage cheese
your choice of fruits (I used 1/2 apple and 1/2 pear)


1. Sift flour, baking powder and salt into a large bowl. Stir in sugar.
2. Beat egg lightly and whisk in milk, yogurt and butter or oil.
3. Make a well in the center of the flour mixture and pour in liquid. Stir to mix well with a spoon.
4. Stir in cottage cheese.
5. Heat some butter or vegetable oil (outside quantity stated in recipe) in a non-stick frying pan. Pour a ladle full of pancake batter into the pan and cook over a medium heat until brown and crisp. Flip over and cook the other side. Repeat until all the batter is used up.
6. Serve with chopped up fruits, yogurt and honey, or any other condiments you like.
